I chose this recipe because my mom has made it a lot every summer and it just came to mind while I was writing this.
This is one of my favorite summertime recipes.

Tip
If you have the time, you can also make your own homemade croutons as tasty toppings. You cut up french bread and saute it in a pan with olive oil and garlic.

Prep time:
Around twenty minutes(plus refrigerate for two hours)
Servings
Around six bowls of Gazpacho
Ingredients For vegetable puree:
1-1.5 lbs of tomatoes, peeled
1/2 large cucumber, peeled
1/2 medium onion
1/2 medium green pepper
12oz tomato juice
For soup:
1/4 cup olive oil
1/3 cup red wine vinegar
1/4 tsp hot sauce
1.5 tsp salt
1/8 tsp pepper
12oz tomato juice
Toppings:
1/2 large cucumber, peeled and chopped
1/2 medium onion, diced
1/2 green pepper, diced
Directions For base layer
Blend ingredients for vegetable puree in blender for 30 sec.
In large bowl mix pureed vegetables with soup ingredients.
