Why I chose this recipe

I chose this recipe because my mom has made it a lot every summer and it just came to mind while I was writing this.

This is one of my favorite summertime recipes.

Prep time:

Around twenty minutes(plus refrigerate for two hours)

Servings

Around six bowls of Gazpacho

Ingredients
For vegetable puree:
  • 1-1.5 lbs of tomatoes, peeled
  • 1/2 large cucumber, peeled
  • 1/2 medium onion
  • 1/2 medium green pepper
  • 12oz tomato juice
For soup:
  • 1/4 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/4 tsp hot sauce
  • 1.5 tsp salt
  • 1/8 tsp pepper
  • 12oz tomato juice
Toppings:
  • 1/2 large cucumber, peeled and chopped
  • 1/2 medium onion, diced
  • 1/2 green pepper, diced
Directions
For base layer
  1. Blend ingredients for vegetable puree in blender for 30 sec.
  2. In large bowl mix pureed vegetables with soup ingredients.
  3. Then refrigerate for two hours.
  4. To serve, top with diced vegetables.
